This is an experience of food provenance and pizza making followed by an evening meal with internationally awarded Italian chef and Mindfulness teacher, Enrico Sgarboosa at Tilbrook Estate’s Adelaide Hill’s beautiful new eco cellar door.
Experience an authentic Italian hands-on food preparation experience led by talented chef Enrico Sgarbossa followed by dinner paired with a glass of Tilbrook Estate’s Methode Traditionnelle Sparkling wine. Let Enrico guide you in “slow food” dough making and pizza preparation journey. Together we will show you how to prepare, eat and enjoy food and wine with a mindful and sensory approach to rekindle awareness of the important connections between our farmer food producers, regional provenance, flavour, aroma and the food and wine we eat and drink.
Enrico and Tilbrook Estate launched their collaboration in January 2023. This is a “match made in heaven” between two equally passionate producers who share a joint passion for authenticity, provenance and truly artisanal craftsmanship in all they do.
Originally from Bassano del Grappa, Italy, Enrico started his career under the famous Italian pizza chef Valerio Vale at Campagna della Pizza, before arriving to these shores in 2010. Since then, he has trained with and taught the best pizza chefs in Australia and the world. In 2019, he was named one of the Top 10 Pizza Chefs outside of Italy by the authoritative Italian food guide, Gambero Rosso. Soon after, his Sydney restaurant Al Taglio quickly developed a massively loyal following in Surry Hills.
In late 2021, Enrico and his wife decided to escape the hustle and bustle of Sydney with a tree change to the Adelaide Hills, seeking to make another big splash in the vibrant local food and wine scene.
To foster his own sense of connection, Enrico has undertaken Mindfulness training. He has run Mindfulness courses for chefs in Sydney, teaching skills and strategies to support wellbeing in an industry known for its high pressure, fast paced environments.
